Honey
Multiple small harvests throughout the season yield distinct honey flavoured by the flowers blooming during that time. We typically produce light (early season), amber (mid-season) and dark (late season) honey each year. Each honey has a unique taste and everyone has their favourite. Many people prefer the floral light honey in tea or baking and the darker varieties in richer foods or as a maple syrup substitute. Try each one and decide for yourself.
Honeycomb
Unprocessed honey in it’s most pure form. Bees build perfect hexagonal cells and fill them with nectar from flowers. Once the bees have evaporated excess moisture they put a wax cap on each cell and move on to the next. Honeycomb is carefully removed from the hive and cut into blocks for sale. This honey is untouched by anything but the bees.
Bite off chunks and chew it like gum, serve with a cheese platter, on ice cream or as an extra special honey spread on toast.
